I love a really tasty chicken salad, but buying it at a restaurant seems to be such a waste of money to me. Instead I would rather make some at home. You can grill, bake, roast or even boil the chicken, then add in your favorite flavors and viola you have Chicken Salad. I hope you enjoy my Chicken Salad Recipe.

My favorite Chicken Salad
Ingredients
  • 2 chicken breasts, cooked, boneless, skinless, copped or shredded
  • salt to taste
  • pepper to taste
  • ¼ to ⅓ cup raisins
  • 1 medium carrot, shredded
  • ¼ cup pecans, chopped
  • celery (chopped) or celery seeds to taste
  • Mayonnaise to taste
Instructions
  1. In a mixing bowl mix chicken, salt, pepper, raisins, carrots, pecans, celery (seed), and mayonnaise.
  2. Server immediately.

Thanksgiving

 

 

 

Today is Thanksgiving and I wanted to take a moment to tell you what I am thankful for. I’m sure many of you are gathering around the table and the TV today. Eating Turkey and watching football or maybe one of the parades. Thanksgiving is such a special time and I hope you have plenty of people you love surrounding you and making you feel special.

Without further ado My Thanksgiving List:

1. I am so thankful for my family. My husband and my boys, my mother and father (who I am lucky enough to still have in my life), my in-laws, and those people that are family through friendship.

2. I am thankful for all of those autism parents who have come before us and who have helped to heal and recover their children and ours. They are stronger than anyone could have every imagined.

3. I am thankful to all the past and present service men and women. My own father served in the Korean War, and I am ever thankful that he came home!

4. I am thankful to be an American.

5. I am so thankful that my husband has a job, and we have a home and food to feed our children.

6. I am thankful for my education. My ability to read.

7. I am thankful for my health. That I can get out of bed every morning, even when I don’t want to, and even when the coffee isn’t already made.

8. I am thankful for this blog, all the people I have been able to reach and to help because of it. I am thankful for the friends I have made through it, and those I will meet eventually.

9. I am thankful for my happy memories, from childhood into adulthood.

10. I am thankful I am loved.

11. One last thing, I’m thankful God saw fit to give us chocolate!

Wordless Wednesday Red Popping Corn

Today’s Wordless Wednesday is of Red Popping Corn on the Cob from my middle son’s field trip to the farm. We were one of the few groups to find the red corn, and I’m proud to say as a chaperone every one of my 4 boys and myself, found red corn. When we came home my son had to immediately pop his corn. You simply put the corn in a brown paper lunch bag, tightly roll the opening closed and pop in the microwave on hi for 2.5 to 3.5 minutes. It was so cool, and tasted great.
