Bucket List

So for once I am totally keeping autism out of this. I really need to start focusing on my life. Autism has been my number one concern for 7 years now, and I am starting to realize that while I am helping my son to fulfill his life, I haven’t spent too much thinking about mine. So I created a bucket list. Those things I want to do before I die. Maybe I will, maybe I won’t, but it sure was fun to create and I think it will get me more interested in doing fun things for me.

25. Ride the Orient Express

24. Visit Tokyo

23. Walk the Appalachian Trail

22. Get a crazy-ass haircut and pull it off

A Perfect Paleo Thanksgiving Review and Giveaway

As many of you know my family is gluten free (most of the time) and also dairy free (again most of the time), but recently I have been toying with the idea of really making a switch over to Paleo eating. Being on a Paleo diet means you eat like our hunter-gather ancestors ate and avoid things such as sugar, grains, legumes and dairy. We know for sure that Matthew has an intolerance to gluten and we think dairy causes issues too. My husband and our middle son both have problems with dairy, and with each of my pregnancies it was apparent I had glucose intolerance, so a Paleo diet seems right up my alley.

Brianna of Flippin Delicious has co-authored a book called A Perfect Paleo Thanksgiving and it has some really easy, yet scrumptious looking Paleo recipes just in time for the Holiday Season. And even though you aren’t supposed to have refined sugar, she does include dessert recipes. The one that got my attention is the crustless pecan pie. I was just saying the other day that I wanted pecan pie, and here is a gluten free and dairy free pecan pie just in time for Thanksgiving. Were my prayers answered or what?
