Boulder Canyon Kettle Cooked Ridged Potato Chips

Boulder Canyon Potato Chips

With Matthew’s new diet we have had to give up even more foods lately. Not only is he Gluten Free, but he is Casein Free, Soy Free and Sugar Free. That means we have even fewer snack/treat options. We tend to choose fruit for our snacks, but there are times when you just want something else. Like this weekend he is going to a friend’s birthday party where they are serving lots of kids favorites such as pizza, PBJ, cake and chips. I have to supply him with a GFCFSFSF pizza, GFCFSF peanut butter and honey sandwich, a GF cupcake, but the mom promised me she would provide GF potato chips!

This week I got to try Boulder Canyon’s Kettle Cooked Canyon Cut Ridged Potato Chips. Interestingly, my husband, Larry, was actually the first one to dive into one of the bags! Coincidence? I don’t think so.  He chose the Sour Cream & Chives. He said they were really tasty, with a natural sour cream and chive flavor which wasn’t too strong. I decided to try the Honey Barbeque. Um, yum! They are gluten free, thick sliced and kettle cooked. I almost ate the whole bag, but I did show some restraint. I LOVE kettle cooked chips. The crunch that comes from a thicker slice, Canyon Cut combined with the kettle cooking makes for the most satisfying munch and crunch around. Then if you are lucky enough to get a chip that has folded over on itself like a little taco, well you are in crunch heaven! (as you can probably tell, those are my favorites!)

I am actually trying to contain myself and not open the Canyon Cut Totally Natural Potato Chips. I think Matthew would love those, so I’m holding on to them for this Fourth of July cookout, where I’ll let him indulge in these all natural potato chips. Then I’ll have to find a local shop to purchase these tasty treats.

Just so you know, Boulder Canyon Kettle Cooked Canyon Cut Ridged Potato Chips are not only gluten free, they contain no trans fats, no cholesterol and no MSG. They are also Kosher and Non GMO. Canyon Natural Foods also offers Malt Vinegar & Sea Salt, Sea Salt & Cracked Pepper and Olive Oil Potato Chips. But the flavors don’t stop there, you can also enjoy Vegetable Crisps, Hummus Chips and Rice & Adzuki Bean Chips.

Boulder Canyon provided the potato chips for review. All opinions are my own.

Happy Father’s Day

It is Father’s Day, as I’m sure you noticed, and of course I have been thinking about both my father and my husband. Both are wonderful dads. My father taught me how to love unconditionally. He taught me the power of a good story and how to talk to almost anyone. He had a real sense of adventure; he ran away and lived with a carnival for 3 years at the age of 16. He showed me what it means to truly be brave; he was a foot soldier in the Korean War (The Forgotten War). He is very loyal and would do anything in this world to help us recover Matthew. He is a great role model and one of my favorite people alive. I’m so fortunate to be his daughter, and to have such a great relationship with him. Not everyone gets a dad like him.

Then I think about my husband. Maybe a bit of a reluctant dad, he has really stepped up and has been with me every step of the way while we battle autism. He loves his children and takes great care of his family. He too, has an adventurous spirit; if only I could publish some of the stories about his journeys! He is super smart and has a wry sense of humor. He has helped me to realize I’m “worth it” and I have a voice that should be heard. He likes crazy movies especially foreign and indie films. He very handy around the house and can figure almost anything out.

I hope you have a wonderful dad to celebrate today! These men deserve to know they are truly special and are immensely loved. Stay Well

Strawberry Granita with Champagne and Frangelico

Strawberry Granita with Champagne and Frangelico

Summer has hit and I really wanted to use up some of my beautiful strawberries in a more inventive way than simply making jam from them. My husband and I had date night the other day and one of the desserts was a fresh berry granita so I decided to try making Strawberry Granita with our CSA strawberries. Of course I couldn’t leave it there so I decided I’d like to make this an “adult” granita and opted for a little champagne. While I was looking over our champagne bottles, yes we actually do keep champagne in our wine fridge, I decided to see what liquors we had. Then I remembered we had Frangelico from #Brandcation and realized that Frangelico and strawberries were a natural pair. And so Strawberry Granita with Champagne and Frangelico was born. I hope you like it, I think it is fabulous. You can serve it up straight or you can add a few spoonfuls to your champagne glass and top off with champagne and a little Cointreau. That is really elegant and would make a great drink for a bridal shower or Sunday brunch.

Strawberry Granita with Champagne and Frangelico Drink

Strawberry Granita with Champagne and Frangelico

  • 2 cups of strawberries
  • 2/3 cup champagne of choice, could also use prosecco or sparkling wine
  • 2 Tbs Frangelico (or more)
  • 2/3 cup simple syrup
  • dash fresh lemon juice

In a blender or food processor puree all ingredients except champagne. Skim foam. Add champagne and pour into shallow glass pan. Place in freezer. Every 30 minutes rake a fork from the outside edge into the center. The granita should be set after approximately 2 hours. Serve or store for later use.
