Gluten Free Dairy Free Sugar Free Mocha Recipe

The Inspiration

When I was younger and my mother would be on a diet she had this great little tip for dealing with those sweet cravings she would sometimes have. She would make a sugar free hot chocolate. That was back when we didn’t realize that artificial sweeteners were so bad for you, so today I decided to update that idea. I’ve taken the same principle and made a Gluten free Dairy free Sugar Free Mocha Recipe instead.

The Modern Update of the Classic

I have used stevia to give sweetness while keeping it natural. Stevia happens to be the preferred sweetener of Dr. Mercola, the well known alternative doctor. I also updated it by using coffee which adds a robustness to the drink and makes it more suitable to any time of day. Then to keep it dairy free and to keep it low calorie I have used So Delicious Coconut Milk Creamer Original. If you have been following I decided to join Weight Watchers On-line and this little concoction is only 1 PointsPlus point. I think that is pretty good and easy to drink! To make it really special I like to use NuNaturals Liquid Peppermint Stevia, which seems perfect during the winter season.

The Recipe: Gluten Free Dairy Free Sugar Free Mocha Recipe

Gluten Free Dairy Free Sugar Free Mocha Recipe

A delicious sugar free mocha that will satisfy your sweet tooth.
Ingredients
  • 2 Tablespoons unsweetened cocoa powder
  • 1 packet NuNaturals Stevia
  • Coffee (I use decaf )
  • NuNaturals Liquid Peppermint Stevia OR peppermint extract (optional)
  • 2 Tablespoons So Delicious Coconut Milk Creamer Original
Instructions
  1. In a medium mug mix the cocoa powder and the stevia, you may wish to mix in a small amount of water to keep the cocoa from clumping when the coffee is added.
  2. Add the coffee and peppermint if using.
  3. Add creamer.
  4. Stir.
  5. Serve Immediately.

Pear Salsa WW Points 1

My husband decided to make a lovely pork carnitas the other night and since I’m using Weight Watchers I thought it might be nice to make my own salsa to accompany it. We have lovely seckel pears from our CSA that needed to be eaten so I chose them for the salsa; and pear salsa was born. The beauty of this fresh salsa is that each serving is only 1 Weight Watchers point! I hope you enjoy this salsa and make it frequently while pears are in season.

Pear Salsa Recipe

Pear Salsa WW Points 1

Ingredients
  • 4 seckel pears, ripe
  • 1 small to medium white onion, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 2 roma tomatoes
  • ¼ teaspoon cumin
  • 2 Tablespoons honey
  • 3 Tablespoons lime juice
  • Salt to taste
  • Pepper to taste
  • fresh cilantro
Instructions
  1. In a small saucepan over medium to high heat, combine all the ingredients except the cilantro.
  2. Cook until mixture begins to boil.
  3. Lower heat to low-medium and simmer until tomatoes are tender and juice begins to thicken a bit.
  4. Allow to cool and refrigerate until ready to serve.
  5. This serves 12 and each serving is 1 Weight Watchers PointsPlus Point.

All Natural Christmas Coal Recipe

Do you ever feel like your kids (or maybe your hubby) deserve a little Christmas Coal in their stockings? I decided to whip up some all natural Christmas coal recipe just for this kind of occasion. I wanted something sweet but not made of refined sugar and something that was easy to make. I used apple juice and vanilla, but you could try other fruit juices and flavor it with extracts like anise, peppermint or even almond.

Apple juice is used to make caramel that looks like Christmas Coal
Ingredients
  • 4 Cups apple juice (or other juice with high sugar content like pineapple or maybe even prune)
  • 1 Tablespoon coconut oil
  • ¼ teaspoon salt
  • ½ teaspoon vanilla
  • ½ teaspoon extract of choice (anise, peppermint, or almond) (OPTIONAL)
Instructions
  1. In a saucepan over medium heat, bring apple juice to a light boil.
  2. Simmer for close to ½ hour or until juice is reduced to roughly ½ cup.
  3. Watch as juice thickens and stir to prevent burning.
  4. Once juice is thick, and has darkened but not burnt, remove from heat and add coconut oil, salt and vanilla.
  5. Using a whisk stir to incorporate the ingredients.
  6. Pour out onto a Silpat or parchment paper.
  7. Caramel is HOT!
  8. As it cools you can shape it into nuggets, I like to use kitchen sheers to cut the caramel and form it.

Gluten Free Egg Nog Muffins featuring King Arthur Gluten Free Muffin Mix

I love egg nog and so do my children. But since two of them are not only gluten free but also dairy free having egg nog can be difficult. My husband was out doing our grocery shopping when he found So Delicious Coconut Milk Egg Nog and he knew I had to have it. Little did he know, I too had seen the Coconut Milk Egg Nog on my last trip, so now we have two quarts of it in the house. That is when I decided to try making Christmas Egg Nog Muffins. We love King Arthur Flour Gluten Free Muffin Mix and use it quite often, so I knew it would bake up beautifully even with a few tweaks here and there. I followed the instructions on the back of the box, simply substituting the So Delicious Coconut Milk Egg Nog for the regular milk it calls for and by adding in some Enjoy Life Chocolate Chips. The kids loved them and I think they make a great addition to Christmas morning.

Egg Nog flavored GFCF Muffins
Ingredients
  • 1 box King Arthur Gluten Free Muffin Mix
  • So Delicious Coconut Milk Egg Nog
  • Enjoy Life Chocolate Chips
Instructions
  1. Follow the directions on the back of the muffin mix.
  2. Substitute the So Delicious Coconut Milk Egg Nog for the milk called for on the box.
  3. (note: I use coconut oil in place of butter or oil)
  4. Add Chocolate chips to the prepared mix.
  5. Bake
  6. Serve
