Although I like to make most of our treats (and other foods) from scratch there is always room for a decent baking mix. I know there are plenty of people out there that are super busy and they can’t always prepare their food from scratch. Or, and I’m sure if you are a mother this has happened to you, your child comes to you the night before and tells you they have a party at school the next morning and you need to supply them with a gluten free cupcake, cookie, or other gluten free treat. Yikes! That can really cause some issues. Then there are folks like my parents or my in-laws. They want to have special treats for the boys but they often don’t know what the kids can have or how to find delicious gluten free recipes. My parents don’t even own a computer, so there is no easy way for them to look up recipes and since them themselves are not gluten free, they can’t always keep a large stockpile of gluten free ingredients in their house. That is when a readily available gluten free mix such as Betty Crocker Gluten Free Baking Mixes is wonderful to have around. My parents can easily find this in their grocery store, they don’t need to hunt all over town, and the directions are simply to follow. The perfect mix.

Betty Crocker, General Mills and MyBlogSpark were cool enough to give me a beautiful baking pack that includes an 8 inch square cake/brownie pan and a baking tool set that contains a timer, spatula, rolling pin and baster.  I used the set to make up my version of Gluten Free Chocolate Chip Pretzel Bars. I hope you enjoy them as much as we do.

Ingredients
  • 1 package Betty Crocker Gluten Free Chocolate Chip Cookie Mix
  • 1 stick butter softened
  • 1 teaspoon gluten free vanilla
  • 1 egg
  • 2 tablespoons milk of choice
  • ½ cup coarsely crushed gluten free pretzels
  • ¼ cup gluten free butterscotch chips (optional)
Instructions
  1. Preheat oven to 350 degrees or 325 degrees if using a dark baking pan.
  2. Prepare the Betty Crocker Gluten Free Chocolate Chip Cookie Mix as directed on package, add the milk and mix.
  3. Add the pretzels and chips (if using).
  4. Spread in 8 inch square baking dish.
  5. Bake for 20 to 30 minutes or until top is golden brown and edges are pulling slightly away from sides of pan.
  6. Cool for 10 minutes then remove from pan and cool on cooling rack.
  7. Frost with you favorite frosting if desired.

You can’t go to just any restaurant and you have to always be prepared. So when a recipe book comes out that is simple to use, offers easy, fast and delicious meals, then you just have to try it.

Tiffany Hinton created this wonderful recipe book containing over 60 gluten free recipes. Each recipe offers dairy free options too. I love that since we are usually dairy free too. The book, with foreword by Carol Sherby, offers everything from breads and cookies to entrees like loaded chili and sausage and peppers.

As I was looking through the book I really was excited to see a steak fajita recipe.  We tried it out the other Saturday and served it with homemade guacamole and handmade corn tortillas. It was a big hit. I did substitute the rib eye the recipe called for with a flank steak we had on hand. There is a recipe for Strawberry Lemonade Cake that just sounds amazing and I would love to have that for Mother’s Day. I adore anything lemon or lime. I also really want to try making her French Onion Burgers. They sound extremely moist and delicious.

I would love to see Tiffany’s take on additional entree and breakfast items. For me, breakfast is always the hardest since the boys aren’t that interested in traditional breakfast meals.

I was lucky and Tiffany sent me both the electronic and paperback versions of the book. I know I will be pulling this book out for all her wonderful treats. I will be making her Orange Melt Aways as soon as possible.

If you know anything about me you should know that I ♥ coffee. Like I think it is ambrosia, or the elixir of the gods. I could drink coffee morning, noon and night, and sometimes I do. When I was nursing Lorenzo I remember sitting up at night craving a cup of coffee. Not for the caffeine but instead because it just tastes so darn good.

But I like to drink my coffee with some sort of creamer. I used to use half and half until I needed to go diary free. Then I moved on to a coconut milk creamer, and now I use full fat coconut milk. Not the lowest calorie option, I know. And since I am still working the Weight Watchers angle, I need to be conscious of what I am putting into my body. Well, I should always be conscious of what I’m taking in, but trying to lose weight makes you scrutinize even more. I also really enjoy a good cup of iced coffee, which brings me to Genesis Today Skinny Coffee. It comes in two flavors, Creamy Cappuccino and Vanilla Latte. But what makes them so different is the fact that these coffees combine medium-roast coffee with a touch of milk and 600mg of pure green coffee bean extract per serving. I first learned about green coffee bean extract from watching Dr. Oz. Green coffee bean extract is known to slow the release of sugar into the bloodstream and helps to support a healthy metabolism.

I have been drinking Genesis Today Skinny Coffee for a couple of days now. I usually have it in the afternoon over ice. It is only 90 calories per 8 fl. oz. serving. That is not bad at all. I love that while it does contain sugar it does NOT contain high fructose corn syrup and instead uses stevia leaf to enhance the flavors. It also contains some great B vitamins such as B12, B6 and B5. I love B vitamins.

I also decided to try Genesis Today Total Cleanse. It is a detoxifying herbal dietary supplement that comes in a two-part cleansing program. I have only been using it for a few days so far, but I’m already liking it. It has been very gentle on my system, which is really important to me. It contains tons of great herbs and supplements like Pau D’Arco, Fenugreek and Milk Thistle. All things I have taken at one time or another, but this combines them and other supplements into one cleansing program.
