Although I like to make most of our treats (and other foods) from scratch there is always room for a decent baking mix. I know there are plenty of people out there that are super busy and they can’t always prepare their food from scratch. Or, and I’m sure if you are a mother this has happened to you, your child comes to you the night before and tells you they have a party at school the next morning and you need to supply them with a gluten free cupcake, cookie, or other gluten free treat. Yikes! That can really cause some issues. Then there are folks like my parents or my in-laws. They want to have special treats for the boys but they often don’t know what the kids can have or how to find delicious gluten free recipes. My parents don’t even own a computer, so there is no easy way for them to look up recipes and since them themselves are not gluten free, they can’t always keep a large stockpile of gluten free ingredients in their house. That is when a readily available gluten free mix such as Betty Crocker Gluten Free Baking Mixes is wonderful to have around. My parents can easily find this in their grocery store, they don’t need to hunt all over town, and the directions are simply to follow. The perfect mix.
Betty Crocker, General Mills and MyBlogSpark were cool enough to give me a beautiful baking pack that includes an 8 inch square cake/brownie pan and a baking tool set that contains a timer, spatula, rolling pin and baster. I used the set to make up my version of Gluten Free Chocolate Chip Pretzel Bars. I hope you enjoy them as much as we do.
Recipe
- 1 package Betty Crocker Gluten Free Chocolate Chip Cookie Mix
- 1 stick butter softened
- 1 teaspoon gluten free vanilla
- 1 egg
- 2 tablespoons milk of choice
- ½ cup coarsely crushed gluten free pretzels
- ¼ cup gluten free butterscotch chips (optional)
- Preheat oven to 350 degrees or 325 degrees if using a dark baking pan.
- Prepare the Betty Crocker Gluten Free Chocolate Chip Cookie Mix as directed on package, add the milk and mix.
- Add the pretzels and chips (if using).
- Spread in 8 inch square baking dish.
- Bake for 20 to 30 minutes or until top is golden brown and edges are pulling slightly away from sides of pan.
- Cool for 10 minutes then remove from pan and cool on cooling rack.
- Frost with you favorite frosting if desired.

Wow, that looks yummy! I’ll have to try this recipe. I love gluten-free food. Before I first tried it a few years ago, I wasn’t sure what to expect, and thought maybe it wasn’t that nice, just “healthy” etc, but soon discovered it’s nicer than non gluten-free food (IMO). I eat it now whenever it’s available, and would like to cook more of it too.

Gluten-Free Oatmeal Chocolate Chip Cookies Recipe
I used my favorite flours in this new oatmeal cookie recipe- a sorghum, millet and tapioca starch combo. I prefer this blend over rice flours. It’s a taste and texture issue. Make sure the oats you choose are certified gluten-free. Check the label. We use Bob’s Red Mill Gluten-Free Rolled Oats.
Preheat the oven to 350ºF. Line two baking sheets with an Exopat or Silpat. If you don’t use a baking mat, parchment paper will help. (Gluten-free cookies tend to scorch easily.)
Ingredients:
Whisk the dry ingredients in a bowl-
1 cup sorghum flour
1/4 cup GF millet flour (or brown rice flour)
1/2 cup tapioca starch/flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1 teaspoon xanthan gum
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
In a separate bowl, beat to cream-
3/4 cup Spectrum Organic Shortening or Organic Coconut oil
1 1/2 cups light brown sugar
1 tablespoon bourbon vanilla
2 organic free-range eggs, beaten (or 1 tablespoon Ener-G Egg Replacer whisked with 1/4 cup warm water till frothy)
Add the whisked dry ingredients to the creamed brown sugar and beat to combine.
Add in:
3 to 3 1/2 cups certified gluten-free rolled oats
Start with 3 cups GF oats. Mix till distributed evenly. If you’d like more in the batter, add in another half cup.
Add in:
1 cup dark chocolate chips
Stir by hand to combine.
Instructions:
Spoon balls of dough onto lined baking sheets and press down a bit to make a cookie shape. If you like your cookies flat and crispy, press down a bit thinner. If not, keep them more rounded.
If you’re not sure, do a test run with a single cookie if you like, to see how much the dough spreads while baking.
Bake for about 12 minutes until slightly golden and chewy. (Note: Longer baking time (15 minutes) creates a harder cookie, closer to packaged oatmeal cookies.
Cool the baking sheets on a wire rack for 3-4 minutes; than remove the cookies onto cooling rack. Wrap cooled cookies in recycled foil and freeze in freezer bags for future treats. These cookies keep better than most gluten-free cookies, due to the oats, so if you’d like to experiemnt, keep a few in an air-tight container. Best if eaten in a day or two.
Cook time: 12 to 15 min Yield: 24 cookies

I love this recipe for paleo chocolate chips cookies. It’s very simple and delicious. It only has 4 ingredients: almond meal, bananas, cinnamon, and chocolate chips!
Its taken me a while but I’ve found a gluten free bread recipe that I really like.

We don’t have a gluten-free house, so we haven’t tried a lot of gluten-free recipes… but it sure is nice to know these gluten-free mixes are out there if we need one in a pinch.
