Brandcation 80’s Style with Flashing Blinky Lights

On our last night in Pigeon Forge we threw a big Brandcation 80’s party with the help of Flashing Blinky Lights. They supplied us with really cool light-up martini glasses.

I thought they would make great party favors for a festive New Years Eve party, but they were perfect for 80’s night. All the ladies were walking around, singing 80’s tunes and carrying their blinking martini glasses.

Flashing Blinky Lights didn’t stop there, they also gave us cute rings to wear with our outfits and got the party going with snacks, drinks and pizza making supplies. I, being the punk that I am, of course had to refuse the ring. Just didn’t work with the outfit. ♥

Trisha and Blondie set up a karaoke machine and got the music started while the rest of us chowed down on some homemade pizzas and snacks. I did not sing, and I’m quite confident that all my Brandcation friends were very happy about that.  This was the perfect ending to a great Brandcation; hanging out talking, singing and eating. Simple, but not boring.

Hollywood Wax Museum Pigeon Forge

King Kong

One of the most fun places I visited while in Pigeon Forge (#PigeonForge) during #Brandcation was the Hollywood Wax Museum. I wasn’t really sure what to expect and I have to confess that before we got there I really didn’t think I would get in to it. But I was so wrong.

Almost immediately we saw Indiana Jones and I had to get a picture with “him”. But I was sure that was the end of it. No other wax figure was going to get me to stand there and act so silly. Yeah, wrong again! Next I saw Nicholas Cage, and although he was not decked out as Big Daddy in Kick Ass, I still had to get a photo with his likeness. Yep, it just kept happening. I found myself getting picture after picture with Forest Gump, Jason Bourne, and Tyler Durden! And really, how could I pass up a photo op with HellBoy? Or the Crypt Keeper from Tales from the Crypt? I was just having way too much fun.

I even took a trip to the roof to get a close up of King Kong. The Hollywood Wax Museum in Pigeon Forge is a really fun place and I wish I had had more time to browse their gift shop because I think they had some of the most memorable souvenirs, but I was late for my date to go zip lining.

Red Envelope Mr Beer Kit

My husband needs a hobby. He works too hard and he really doesn’t get a lot of time for himself so I thought I would find something for him. I knew it had to be interesting and it had to be something that required some attention, but not TOO much attention. Then I found  the Mr Beer Home Brewing Kit at Red Envelope. I thought this sounded like the perfect gift. Pretty much everything he needs to brew his own Pale Ale is found right inside the box including a 2 gallon fermenter, brewing ingredients, 8 bottles, caps and labels, and the Brewer’s Guide.

I know I made a good choice because as soon as the box arrived he had to open it up and start looking through it. He even went online to look at what other beer brewing refills they offered. I found the Mr. Beer Home Brewing Kit on Red Envelope with their Christmas Gifts. With Christmas fast approaching I like to look at Red Envelope to find unique gifts for my family. I know I would love the personalized wine cellar sign.

It was easy to order from Red Envelope and the Beer Kit arrived right on time. I also liked the fact that once I set up a login with Red Envelope I was also able to use the same user name and password on their sister sights ProFlowers, ProPlants, Personal Creations, Cherry Moon Farms and Shari’s Berries. My husband has used ProFlowers a lot over the years so this is convenient for us.

I can’t wait to see how our home brew turns out. I think this may be a hobby that he could love. And drink!

Gluten Free Pumpkin Spice Muffins

 

I sort of fell into these gluten free pumpkin spice muffins. The other day the boys got home from school and it just turned into one of those days. You know the kind I’m talking about, where everything you do seems to be wrong. That was what happened with dinner. My steak was still frozen so I needed to go to plan B, also known as Breakfast for dinner. The boys requested pancakes so I quickly grabbed our King Arthur Gluten Free Flour and whipped up my Gluten Free Pancake batter. My husband was frying up the bacon and the whole house was in a whirlwind. I poured the pancake batter and waited for it to bubble, but when I went to flip the pancakes over they wouldn’t flip. They just sort of folded in the middle, and they got all gooey. I tried another one. It did the same thing. That is when it dawned on me to look at the box. Yep, I had not picked up the Gluten Free Flour, I had picked up the King Arthur Flour Muffin Mix, Gluten Free, 16-Ounce (Pack of 3)! So I grabbed the muffin pan, added the rest of the mix and made muffins instead. These are light, beautiful muffins that the kids just love. They are a family favorite now.

Pancake Muffins

Gluten Free Pumpkin Spice Muffins

Gluten Free (and dairy free) muffins inspired by pumpkin spiced pancakes
Ingredients
  • 1 Box King Arthur Gluten Free Muffin Mix
  • 1½ Cups milk of choice, rice, hemp, almond, cows
  • 3 Tbs coconu oil, melted - can substitute butter if not dairy free
  • 2 eggs
  • 1 teaspoon gluten free vanilla
  • ½ teaspoon salt
  • 2 teaspoons aluminum free baking powder
  • 2 teaspoons pumpkin pie spice
  • pecan halves
  • white chocolate chips (optional - These are NOT dairy free)
Instructions
  1. Preheat oven per Muffin Mix directions.
  2. In a large mixing container, mix the wet ingredients.
  3. Add the dry ingredients except the pecans and white chocolate chips.
  4. Line muffin pan with papers.
  5. Pour muffin mix into lined muffin pan.
  6. Top with pecan halves and white chocolate chips if using.
  7. Bake per Muffin Mix directions or until toothpick inserted into center comes out clean.
  8. Muffins may require additional cooking time.
  9. Remove from oven and allow to cool in muffin pan.
  10. Once cool, remove from pan and serve.
