I have wavy hair and I love the way it looks when I get out on the beach. I get these really beautiful, soft beachy waves that only come from salt water. An easy way to get the look every day is to use this DIY salt hair spray. I love that I can control the amount of salt so that it isn’t so drying. I also added some conditioner and natural oils to help keep my hair looking fresh and refreshed whenever I use my DIY Salt Hair Spray.

I simply spray the DIY Salt Hair Spray on my dry hair and scrunch. As it dries I get a great natural wave patter that is reminiscent of days at the beach. You can play around with the amounts

Ingredients
  • 1 4oz spray bottle
  • 4oz of water
  • 1 teaspoon sea salt
  • ½ teaspoon leave in conditioner
  • 5 drops shea oil or essential oil of choice
  • dab of styling gel (optional)
Instructions
  1. In a microwavable container heat the water, salt and conditioner for 30 to 45 seconds.
  2. Mix until salt, conditioner and styling gel (if using) dissolve.
  3. Add oils.
  4. Pour into spray bottle and allow to cool completely before use.
  5. Spray mixture on dry hair and scrunch into waves.
  6. Allow to dry for full effect.

We are trying to get Lorenzo into our local special needs preschool as a peer model. I think he will be chosen since he has such wonderful communication skills and for the fact that he is quite comfortable with children with special needs. But before he is chosen we had to take him up to school for a “play date” to see if he was a good match for the program. Part of the paperwork that was required was a recent photo so the teachers could all put names to the faces of all those beautiful children. Luckily we have Canon Printers in the office because although I have tons of photos of him, most of them are digital. That doesn’t work at all when you need to bring a physical printed photo with you. I had Larry print out the head shot above. He is such a little ham.

We love having a Canon Printer in the house because we can make sure we have documents right away. There have been times when we are ready to head to an IEP meeting and want to print out all the correspondences we have had with Matthew’s teachers and therapists. That would take a lot of time and money to get them to a printing service, especially if a message has just come in the night before.

And obviously if you own a computer, you want to have a printer available. I know my in-laws love having one around so they can print selected photos of the kids. My parents find them handy for all their insurance paperwork they need to submit, and any household with school age children will find them very handy when term papers are due.

Wordless Wednesday Egg Floating in Water

Last week when the boys had a snow day off from school we decided to do a few science experiments with things I had around the house. This is the results of Egg Floating in Water – it was achieved by using a lot of salt to increase the density of the water and allow the egg to float suspended in the middle of the glass. I thought it was pretty cool.

Every November we order a half of a grass fed steer. That is a lot of beef! And there is really only so much you can do certain cuts of beef, so we either end up with a ton of roasts or a ton of ground beef. This year we opted for the ground beef. My chest freezer is full and I need to figure out other ways to serve hamburger. There are only so many bowls of chili, sloppy joe and spaghetti with meat sauce a person can eat.

My husband is a big fan of all Asian foods and really enjoys the diverse flavors. He is particularly fond of Thai food so I decided to make a Thai inspired Paleo Red Curry Beef dish using my ground beef instead of the more traditional sliced steak.

Paleo Red Curry Beef Recipe

Ingredients
  • 1 lb ground beef - preferable grass fed
  • 1 red bell pepper, chopped
  • 1 medium white or yellow onion, sliced
  • 2 - 3 Tablespoons Red Curry Paste (found in Asian section of market)
  • 1 can of coconut milk
  • 1 1inch piece of fresh ginger, peeled and bruised
  • 1 - 3 Tablespoons fish sauce
  • sugar or honey to taste
  • ¼ cup basil, chopped
Instructions
  1. In a large skillet or wok, cook the ground beef.
  2. Remove from pan and set aside
  3. In the drippings cook the peppers and onion until very soft and onions are slightly brown
  4. Add the red curry paste, coconut milk, ginger, sugar or honey and fish sauce to the pan
  5. Return the beef to the pan and heat through stirring to make sure beef is evenly coated
  6. Add the basil and stir
  7. Serve immediately
  8. DO NOT EAT THE GINGER
