My husband and I are trying to eat a lot more vegetables and we were hoping to get the kids to eat them too. For me, I have found I have a lot more luck if I drink my veggies, that is why we start off every day with a green smoothie. But getting them in through out the rest of the day still proved to be a challenge. So we opted to try soups. One of our first soups is the summertime favorite Gazpacho. Here is an easy Gazpacho recipe. We served it in little aperitif glasses to introduce the kids to the flavor and texture. It was a fun way to try Gazpacho and it also makes it the perfect way to serve it during dinner parties or at a bridal or baby shower.

Gazpacho Recipe

A zesty version of Gazpacho that allows you to get a lot of veggies in a easy to make raw, cold soup!
Ingredients
  • 2 large ripe tomatoes, chopped
  • 1 cucumber, seeded, peeled, chopped
  • 1 small onion, quartered
  • 1 sweet bell pepper, seeded
  • 3 cups vegetable juice - like V8
  • ⅓ cup white or red wine vinegar
  • several dashes hot pepper sauce
  • ¼ tsp salt
  • ¼ tsp pepper
Instructions
  1. Place all ingredients in blender and blend until smooth.
  2. Serve immediately

Gluten Free Pancake Recipe

I have decided to stop using Gluten Free Bisquick because General Mills opposes GMO labeling and because it is very processed. We are trying to continue to cut out more and more processed foods so I have opted for making my gluten free pancakes on my own. I have started using King Arthur Gluten Free Flour blend and have adapted one of their regular pancake recipes for gluten free baking.

Ingredients
  • 2 large eggs
  • 1½ Cups milk
  • 2 tsp vanilla extract (gluten free)
  • 1 tsp almond extract (gluten free)
  • 3 Tbs melted butter
  • 1½ Cups King Arthur Gluten free Flour blend
  • ½ tsp salt
  • 3 tsp baking powder
  • 2 Tbs honey
Instructions
  1. In a large bowl combine the ingredients until well incorporated.
  2. Use immediately.
  3. Pour batter onto a hot pan and cook until the pancake starts to firm up.
  4. Flip pancake and cook a few seconds more.
  5. Serve hot with your favorite toppings, we like natural peanut butter with a drizzle of honey.

Pasta la Carbonara Recipe

My husband’s family is Italian and I am always looking for real pasta recipes that can be made gluten free. Here is one of my favorite, Pasta la Carbonara. We use gluten free mung bean fettuccine pasta, beautiful natural bacon, peas and a light egg yoke, cheese and cream sauce. Enjoy!

Easy Gluten Free Pasta dish featuring bacon, peas and cheese.
Ingredients
  • 1 lb thick cut bacon, chopped into large pieces
  • 1 lb mung bean pasta
  • 4 egg yokes
  • ½ cup half and half or cream
  • salt (to taste)
  • pepper (to taste)
  • 1¼ cup grated Parmesan cheese
  • 1½ cup peas, frozen
Instructions
  1. In a frying pan, cook bacon pieces until they are crisp, set aside.
  2. While bacon is frying, in a large pot bring water to a boil, and cook pasta according to directions.
  3. In a small sauce pan over low heat, combine egg yokes, half and half, salt, pepper and cheese.
  4. Using a flexible spatula constantly stir the mixture so that the egg does not burn, about 5 minutes or until slightly thickened and heated through.
  5. Drain pasta.
  6. Mix pasta, bacon, peas and egg mixture.
  7. Serve immediately.

Snow Capped Bananas – Banana Meringues

My boys adore bananas and since Matthew is now on an even more restricted diet I’m always searching for delicious treats that aren’t terrible for you. Enter the meringue. Meringues are naturally gluten free and dairy free. They are fairly low in sugar and are very simple to make, yet they turn out an extremely elegant finished product. So the Snow Capped Banana was born (AKA Banana Meringues)

Snow Capped Bananas - Banana Meringues

Fresh Bananas topped with broiler browned Meringue
Ingredients
  • 4 egg whites
  • ⅓ cup sugar
  • ⅛ tsp salt
  • ⅛ tsp cream of tartar
  • ½ tsp of vanilla extract
  • 2 bananas, peeled and cut into large chunks (approx. 5 pieces per banana)
Instructions
  1. In a clean bowl mix egg whites, sugar, salt and cream of tartar.
  2. Beat on medium-high until medium stiff peaks form
  3. Add vanilla and beat to combine.
  4. Be careful not to over beat.
  5. Spoon meringue mixture over tops of banana chunks and place bananas flat side down on baking sheet.
  6. Place under broiler and broil until tops of meringue brown.
  7. Be careful not to burn
