Betty Crocker Gluten Free Giveaway

I love Betty Crocker’s Gluten Free products. They are so convenient and can be made casein free simply by substituting CF “butter” for the regular butter you would normally add. I often keep the Gluten Free Bisquick on hand to make easy pancakes ( I like to add a splash of vanilla to the mix), yummy waffles (try them with fresh kiwi on top – my favorite), and kid favorite pizza. The pizza is awesome since it only takes 30 minutes to bake and I know the boys will always eat it. This is often my go to meal when I’m in a pinch.

I also rely on Betty Crocker’s yellow and chocolate cake mixes when I want to whip up some breakfast muffins. I prepare the cake mix per the package directions, then I add a cup of grated carrots, a cup of grated zucchini, a cup of GFCF chocolate chips and a few tablespoons of chia seeds (yes, chia pet chia seeds, but the ones you buy at a grocery store not from the chia pet package), sometimes I’ll add an extra egg for protein. Then I bake in muffin cups until done. These make excellent breakfast muffins if you pair them with a protein.

And just this past weekend I made the Betty Crocker Gluten Free Brownies. It was a busy holiday weekend and we had a lot of family events to celebrate. I baked up the brownies and served them a la mode! So yummy. Even my father, who is NOT gluten free, loved them. My mom said you could serve them to anyone and they would have no idea they were gluten free.

Gluten Free Bisquick Giveaway

(Wow, can you believe that date – already October!)

I almost didn’t write this today. I’m having one of those days where everything you do just kind of falls apart. It is almost comedic. But then, it isn’t.

So anyway, I decided to do this because we all have bad days and even in those bad days we can still have good pancakes! MyBlogSpark and Bisquick sent me a really nice, complimentary, Gluten Free Bisquick prize pack. It included one box of Bisquick Gluten Free, an Orka Spatula, an awesome cast iron pancake pan (my hubby was really excited about this), and a Pancake Pen. I must admit, today I had some problems. I was very excited to use the pancake pen, which is a tall cylinder in which you can mix your pancake batter, then, using the spout, you can “write” with the batter and cook up cool pancakes. I usually just use a big measuring cup and often my cool pancakes don’t turn out so cool. Larry has told me that my smiley face pancakes look more like “The Scream”, but he says that makes them even cooler. Yeah. So I was hoping the pancake pen could help. I love the idea and once the batter was actually made and in the pen it worked pretty well. The directions on the pancake pen say you can mix the batter right there in the pen. This did not work so well for me and resulted in a real comedy of errors which included multiple bowls, removing both ends of the pancake pen and a funnel. However, once the Bisquick Gluten Free pancake batter was properly made and filled the pancake pen, it worked like a charm. So my advice to you, mix the batter in a bowl and then fill the pancake pen from the bottom with the lid on.

i like to use wheat chex to make puppy chow! (our version is made by heating up peanut butter and chocolate chips with a bit of butter to make smooth then tossing with the chex then covering it with powdered sugar. its delicious!
