Sara, you have to pick them. They have hard, indelible shells so you must crack them similar to a lobster and eat the meat inside. They are actually blue before they are steamed at which point they turn red. The seasoning is called Old Bay and they are steamed in it. Then you get some on your fingers while you clean the crabs and you have Maryland steamed crabs. They are quite popular.

Those are hard shell, not soft. Soft are usually pan fried or deep fried. These are hard shell steamed. You have to open the shell and pick the meat sort of like lobster. A huge Maryland tradition.
